Sue Joy’s Egg Free Banana Bread

Although eggs are a great source of protein and vitamins, people who struggle with allergies can find it challenging to find healthy recipes with egg substitutes. So this morning on Weekdays, Sue Joy shared her Egg Free Banana Bread recipe!Banana

She used golden flaxseed meal which is a great substitute for egg. Mixing 1 tbsp of golden flaxseed meal with 3 tbsp water can replace on egg. This recipe can be made in one bowl making the baking and clean up process super easy. “I can’t eat grains or gluten, I don’t have unhealthy cheap oils or refined sugars or dairy, so lots of people will follow my website and cookbooks because they’re the things that they can’t eat too. I get lots of messages from people, do you have this in an egg free version or nut free version? So of course that gets me moving again and start creating!”

Ingredients:

  • 3 large ripeĀ  bananas (1 1/2 cups) well mashed
  • 1/4 cup maple syrup (100%)
  • 60ml macadamia oil
  • 1 tsp bicarb baking soda
  • 1 3/4 cups almond meal/flour
  • 1/2 cup arrowroot flour, or tapioca
  • 3 Tbsp (30g) golden flaxseed meal (fine ground)
  • 3 tsp cinnamon
  • 1/4 tsp fine sea salt
  • 1/2 cup chopped pecans
  • Optional Topping: chopped pecans, & a sprinkling of cinnamon
