Our favourite food Blake Proud, joined Kirste and Dan to share another one of his delicious recipes.


  • 250g Shark Fillets
  • 1 tbsp butter
  • Bunch of sage
  • 1/4 Cup Olive Oil
  • 1 cup cream
  • 1 tbsp capers
  • 1 tbsp Lemon Juice
  • 1 tsp cracked pepper
  • salt


  1. Start by adding the oil and sage into the mixer and blend. Let it simmer on low heat for about 20 minutes. Set it aside to infuse.
  2. Add the cream, capers, lemon juice, pepper and salt into a pot and simmer for 15-20 minutes until it is infused.
  3. Heat a pan to medium/high heat. Melt the butter in the pan until it starts to foam, salt the shark fillets and cook for about 10 minutes on each side until it is golden and cooked through.
  4. Place the shark fillets in a bowl or plate with high sides, pour over the cream and drizzle it with the sage oil. Add the crispy fried sage on top to garnish.
