Blake Proud’s grilled zucchini and whipped feta

Blake Proud joined Kirste and Dan to share his delicious grilled zucchini and whipped feta!

  • 2 zucchinis
  • 1 small garlic clove, minced.
  • Olive oil
  • 1 tsp lemon zest
  • 1 tsp chilli flakes
  • 1 block of soft feta
  • 1/4 cup fresh dill
  • salt & pepper
  • water 
  • toasted baguette or bread
  1. Use a mandolin to slice your zucchini the long way, so they are like surfboards. Toss them in a snap lock bag with 1 tsp of olive oil and the minced garlic clove. Leave it to permeate for a few minutes.
  2. Add the lemon zest and chilli flakes to 3 tbsp olive oil with a pinch of salt and leave to rest and infuse.
  3. Add feta into a tall container with 1 tbsp olive oil and blitz with a stick blender. It will probably be a bit too thick so add in a little bit of water until it reaches a smooth creamy consistency.
  4. Grill the zucchini on a BBQ or griddle pan until it is blacked out and charred. Once it is cooked set it aside to slightly cool.
  5. Add the dill and infused oil to the zucchini being careful not to pull the zucchini apart. Add a pinch of salt and pepper to taste.
  6. Serve on a warm plate with a dollop of the whipped feta smeared across the plate. Place the zucchini on top with a side of char-grilled baguette slices.
