Blake and Ella had their baby shower on the weekend. With over 60 hungry mouths to feed he wanted something quick and tasty to serve – his Chicken Satay’s were a winner!
- 400ml coconut cream
- 3 big tbsp peanut butter
- 1 garlic clove
- 1 tbsp Soy Sauce
- 3/4 – 1 tsp curry powder
- Combine all ingredients in a blender.
- Keep some aside for serving.
- Marinate the chicken over night with the rest of the satay mixture.
- Grill over coals or on the BBQ for maximum flavour.
- Serve with rice or salad
