Creamy Chicken and Lime

The fresh flavour from zesty limes, and the sweet warm spices of garam masala in this creamy chicken dish will delight your taste buds. Serve with cauliflower rice and bok choy, steamed lightly and tossed in coconut aminos.

Ingredients

  • 1/2 cup coconut cream, mixed well
  • Juice of 2 lge lime(s)
  • Fine lime zest, from 1 lime
  • 2 tsp coriander, ground
  • 2 tsp cumin
  • 3/4 – 1 tsp garam masala
  • 1/2 tsp paprika
  • 600g – 700g skinless chicken, breast or tenderloins, diced
  • 1 Tbsp coconut oil
  • 1 onion(s), diced
  • 2 tsp garlic, minced
  • 1 tsp ginger, minced or grated
  • 3/4 tsp pink Himalayan salt
  • Fresh coriander, leaves roughly chopped – to serve

Directions

To a medium bowl: add coconut cream, lime juice and zest, coriander, cumin, garam masala and paprika; mix well. Add diced chicken and stir through the marinade to coat well. Place in the fridge for 1 hour. (Read more on Sue’s favourite spice blend garam masala)

To cook: heat a large frying pan on medium heat. Add coconut oil and onion, cook, stirring for 2 minutes. Add garlic and ginger, cook for 1 minute.

Pour in the chicken with marinade and bring to a simmer; add salt. Cook uncovered, stirring often for 15-20 minutes or until chicken is tender. Add extra coconut cream at the end if you prefer more sauce.

Serve with bok choy (or another green vegetable), cauliflower rice and a sprinkle of coriander leaves. (Sue also has a cauliflower rice recipe.)
